Ingredients

1 cup (2 sticks) unsalted butter, melted

1 cup packed brown sugar

½ cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup white chocolate chips

1 cup fresh raspberries (or frozen, but thawed and drained)

Instructions

Preheat the oven: Set your oven to 350°F (175°C) and grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

Mix wet ingredients: In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined and smooth. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine dry ingredients: In another bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, stirring until just combined; do not overmix.

Add chocolate and raspberries: Gently fold in the white chocolate chips and fresh raspberries, being careful not to break the berries too much.

Pour into the pan: Transfer the batter into the prepared baking pan, spreading it evenly with a spatula.

Bake: Place the pan in the oven and bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Cool and slice: Once baked, remove the blondies from the oven and allow them to cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely before slicing into squares or rectangles.

Serve and enjoy: Serve these irresistibly chewy raspberry white chocolate blondies warm or at room temperature. They’re perfect with a scoop of vanilla ice cream or a cup of tea!
