Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup white chocolate chips

1 cup fresh raspberries (halved if large)

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Cream the Butters and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This usually takes about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract until well combined.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.

Combine Mixtures: Gradually add the dry ingredients into the wet mixture, mixing on a low speed just until combined. Avoid overmixing.

Fold in Chocolate and Raspberries: Gently fold in the white chocolate chips and raspberries with a spatula or wooden spoon, being careful not to break the raspberries too much.

Scoop the Dough: Use a cookie scoop or tablespoon to drop dough balls onto the prepared baking sheets, allowing about 2 inches of space between them.

Bake: Place the baking sheets in the preheated oven and bake for 10-12 minutes, or until the edges begin to turn golden but the centers remain soft.

Cool: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Optional Dusting: If desired, lightly dust with powdered sugar before serving for an elegant touch.
