Roasted Beet & Feta Flatbread

2 medium-sized beets, peeled and cut into 1-inch cubes

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 flatbread or pita bread (store-bought or homemade)

½ cup ricotta cheese

½ cup crumbled feta cheese

2 tablespoons honey

1 tablespoon balsamic reduction (optional)

Fresh arugula, for topping

Chopped walnuts or pecans (for crunch, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Beets: Place the cubed beets on a parchment-lined baking sheet. Drizzle with olive oil, and season with salt, pepper, and thyme. Toss to coat evenly. Roast in the preheated oven for 25-30 minutes, or until the beets are tender and slightly caramelized, stirring halfway through.

      Prepare the Flatbread: While the beets are roasting, place your flatbread on a different baking sheet. Spread the ricotta cheese evenly over the flatbread, leaving a small border around the edges.

        Top with Feta & Beets: Once the beets are done, remove them from the oven and let them cool for a couple of minutes. Scatter the roasted beets over the ricotta layer. Then sprinkle the crumbled feta cheese on top.

          Bake the Flatbread: Place the topped flatbread in the oven (you can put it in alongside the beets if there is room) and bake for about 10-12 minutes, or until the edges of the flatbread are crispy and the cheese is slightly softened.

            Drizzle & Assemble: After baking, remove the flatbread from the oven. Drizzle honey and balsamic reduction (if using) over the top. Garnish with fresh arugula and sprinkle with walnuts or pecans for added crunch.

              Slice & Serve: Let it cool for a minute, then slice into desired portions and serve warm!
