Ingredients
  

1 large head of garlic

1 cup (2 sticks) unsalted butter, softened

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh chives, finely chopped

1 teaspoon lemon zest

½ teaspoon sea salt (more to taste)

¼ teaspoon freshly ground black pepper

Optional: ¼ teaspoon red pepper flakes for a kick

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Cut about ¼ inch off the top of the garlic head to expose the cloves. Drizzle with a little olive oil and wrap it in aluminum foil.

        - Roast in the preheated oven for 30-35 minutes, until the cloves are soft and golden brown. Remove from oven and let cool slightly.

          Prepare the Butter:

            - In a medium bowl, add the softened butter.

              - Squeeze the roasted garlic cloves out of their skins directly into the bowl with the butter. You should have about 8-10 cloves.

                - Using a fork or a hand mixer, mash the garlic into the butter until well combined.

                  Add the Herbs and Seasonings:

                    - Stir in the chopped parsley, thyme, and chives.

                      - Add the lemon zest, sea salt, black pepper, and red pepper flakes (if using).

                        - Mix thoroughly until all ingredients are evenly distributed.

                          Taste and Adjust:

                            - Taste the butter and adjust the seasoning if necessary. Add more salt, herbs, or lemon zest to suit your preference.

                              Chill and Serve:

                                - Transfer the herb butter to a piece of plastic wrap or parchment paper. Shape it into a log, twisting the ends to seal it.

                                  - Refrigerate for at least 1 hour to allow the flavors to meld. This butter can be stored in the fridge for up to 2 weeks or frozen for up to 6 months.
