Ingredients

4 medium-sized russet potatoes, washed and scrubbed

4 tablespoons unsalted butter, melted

6 cloves garlic, minced

1 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Olive oil, for drizzling

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper.

Prepare the Garlic Butter: In a small bowl, mix the melted butter with the minced garlic, oregano, thyme, salt, and pepper. This fragrant garlic butter will be the key flavor in your potato stacks.

Slice the Potatoes: Using a mandoline or a sharp knife, slice the potatoes into thin, even rounds (about 1/8 inch thick). It's important to keep the slices consistent for even cooking.

Assemble the Stacks: Take a slice of potato and drizzle a bit of the garlic butter over it. Then sprinkle a layer of Parmesan cheese. Stack another potato slice on top and repeat, layering with butter and cheese until you have a tall stack (ideally 5-6 slices high).

Drizzle and Season: Place the stacks on the prepared baking sheet. Once all stacks are assembled, drizzle a little olive oil over each stack and add a sprinkle of extra Parmesan cheese if desired.

Bake: Place the baking sheet in the preheated oven and roast for about 35-40 minutes or until the potatoes are golden brown and crispy on the outside while still tender on the inside.

Garnish and Serve: Once the roasted garlic parmesan potato stacks are out of the oven, let them cool for a few minutes. Garnish with freshly chopped parsley for a pop of color and extra flavor before serving.

Enjoy these crispy, cheesy, and incredibly flavorful potato stacks as a side dish or tasty appetizer!
