Roasted Garlic Parmesan Smashed Potatoes

2 pounds baby potatoes (Yukon Gold or red)

1 head of garlic

1/4 cup olive oil

1 cup grated Parmesan cheese

1/2 cup unsalted butter, melted

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - Wash the baby potatoes thoroughly and place them in a large pot. Cover with cold water and add a generous pinch of salt. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender.

        Roast the Garlic:

          - While the potatoes are cooking, take the head of garlic and slice off the top, exposing the cloves slightly. Drizzle with a tablespoon of olive oil and wrap it tightly in aluminum foil.

            - Place the wrapped garlic in the oven alongside the potatoes and roast for about 30-35 minutes, until the cloves are soft and caramelized.

              Smash the Potatoes:

                - Once the potatoes are cooked, drain them and let them cool for about 5 minutes. Transfer them to a baking sheet lined with parchment paper.

                  - Using a fork or the bottom of a glass, gently smash each potato so they are flattened but still intact.

                    Prepare the Mixture:

                      - In a small bowl, squeeze out the roasted garlic cloves (they should pop out easily) and mash them with a fork. Combine the mashed garlic with melted butter, remaining olive oil, grated Parmesan cheese, salt, and pepper.

                        Combine and Bake:

                          - Drizzle the garlic-Parmesan mixture over the smashed potatoes, ensuring each potato is generously coated.
