Roasted Garlic & White Cheddar Mashed Potatoes – Extra Creamy!

2 pounds Yukon Gold potatoes, peeled and cubed

1 head of garlic

4 tablespoons unsalted butter

1 cup heavy cream

1 cup grated white cheddar cheese

Salt, to taste

Black pepper, to taste

Chives or parsley, for garnish (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil and wrap it in aluminum foil. Roast for about 30-35 minutes, until the cloves are caramelized and soft. Allow it to cool slightly before squeezing the roasted garlic into a small bowl.

    Boil Potatoes: While the garlic is roasting, place the cubed Yukon Gold potatoes in a large pot and cover them with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.

      Heat Cream & Butter: In a small saucepan, combine the heavy cream and 4 tablespoons of butter. Heat over low until the butter is melted and the mixture is warm. Do not let it boil. Stir in the roasted garlic, mashing it gently into the cream mixture.

        Mash the Potatoes: Once the potatoes are cooked, drain them thoroughly and return them to the pot. Using a potato masher or ricer, mash the potatoes until they are smooth and creamy.

          Combine Ingredients: Gradually stir in the warm cream and garlic mixture to the mashed potatoes. Mix until well-combined and creamy. Then fold in the grated white cheddar cheese until melted and incorporated. Season with salt and black pepper to taste.

            Serve: Transfer the mashed potatoes to a serving bowl and garnish with chopped chives or parsley, if desired. Enjoy immediately while warm!
