2 cups fresh strawberries, hulled and halved

2 tablespoons granulated sugar

2 tablespoons balsamic vinegar

Pinch of sea salt

1 cup heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 teaspoon pure vanilla extract

1/2 cup of the roasted strawberries (from above)

1 tablespoon lemon juice

Instructions
 

Roast the Strawberries:

    - Preheat your oven to 400°F (200°C).

      - In a mixing bowl, combine the halved strawberries, granulated sugar, balsamic vinegar, and sea salt. Toss gently to coat the strawberries evenly.

        - Spread the strawberries in a single layer on a baking sheet lined with parchment paper.

          - Roast in the oven for 20-25 minutes, or until they are soft and caramelized. Remove and let them cool slightly. Reserve 1/2 cup for later use and puree the rest.

            Prepare the Ice Cream Base:

              - In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar over medium heat. Stir until the sugar is fully dissolved. Do not let it boil.

                - Remove the saucepan from heat and add the vanilla extract and lemon juice.

                  - Stir in the pureed roasted strawberries until well mixed.

                    Chill the Mixture:

                      - Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

                        Churn the Ice Cream:

                          - Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
