2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 can (15 oz) black beans, rinsed and drained

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon salt

½ teaspoon black pepper

8 small corn or flour tortillas

1 ripe avocado, sliced

½ cup crumbled feta cheese or cotija (optional)

¼ cup fresh cilantro, chopped

Lime wedges for serving

Hot sauce (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Prepare Sweet Potatoes: In a large mixing bowl, combine the diced sweet potatoes, olive oil, ground cumin, smoked paprika, chili powder, salt, and black pepper. Toss until the sweet potatoes are evenly coated.

      Roast Sweet Potatoes: Spread the sweet potato mixture evenly on a baking sheet in a single layer. Place in the preheated oven and roast for 25-30 minutes, or until the sweet potatoes are tender and golden brown, stirring halfway through for even cooking.

        Warm Black Beans: While the sweet potatoes are roasting, heat a small saucepan over medium heat. Add the rinsed black beans and warm them gently for about 5 minutes, stirring occasionally. If desired, season with a pinch of salt or lime juice.

          Prepare Tortillas: Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side until they are pliable and slightly browned. Alternatively, you can warm them in the microwave for about 15 seconds.

            Assemble Tacos: Once the sweet potatoes are ready, remove them from the oven. To assemble each taco, place a generous spoonful of roasted sweet potatoes and black beans onto a tortilla. Top with avocado slices, crumbled feta cheese, and fresh cilantro.
