2 pounds ripe tomatoes, halved

1 large onion, quartered

6 cloves garlic, peeled

3 tablespoons olive oil

Salt and freshly cracked black pepper, to taste

1 teaspoon dried oregano

4 cups vegetable broth (or chicken broth)

1 cup fresh basil leaves, packed

1 tablespoon balsamic vinegar

Optional: 1 cup heavy cream or coconut milk for a creamier soup

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: On a large baking sheet, place the halved tomatoes cut-side up, onion quarters, and whole garlic cloves. Drizzle with olive oil and season generously with salt, black pepper, and dried oregano.

      Roast the Vegetables: Roast in the preheated oven for about 25-30 minutes, or until the tomatoes are caramelized and the onions are tender. Stir halfway through for even roasting.

        Blend the Soup: Remove the roasted vegetables from the oven and let them cool for a few minutes. In a large pot, combine the roasted vegetables and vegetable broth. Use an immersion blender to puree the mixture until smooth. Alternatively, transfer batches into a regular blender and blend until smooth, then return to the pot.

          Add Fresh Basil and Balsamic Vinegar: Stir in the fresh basil leaves and balsamic vinegar. If you prefer a creamier soup, add the heavy cream or coconut milk at this stage. Cook over low heat for an additional 5-10 minutes, just to warm the soup through and meld flavors.

            Taste and Adjust: Taste the soup and adjust seasoning with more salt, pepper, or vinegar if desired.

              Serve: Ladle the soup into bowls and top with extra fresh basil leaves for garnish. Drizzle with a touch of olive oil or a splash of balsamic vinegar for an elegant touch.
