Salmon Skewers with Lime Salsa

Ingredients
  

1.5 lbs fresh salmon fillets, skinless and boneless

2 tablespoons olive oil

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Juice and zest of 2 limes

1 red bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

8 skewers (if wooden, soaked in water for 30 minutes)

For the Lime Salsa:

1 large avocado, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Instructions
 

Prepare the Marinade: In a bowl, whisk together olive oil, honey, minced garlic, smoked paprika, salt, black pepper, lime juice, and lime zest.

    Marinate the Salmon: Cut the salmon into 1-inch cubes and add them to the marinade. Toss to ensure all pieces are coated. Let it marinate in the refrigerator for at least 30 minutes.

      Prepare the Skewers: While the salmon marinates, soak your wooden skewers in water (if using). Preheat the grill to medium-high.

        Assemble the Skewers: Thread the marinated salmon, red bell pepper, and red onion onto the skewers, alternating between the salmon and vegetables.

          Grill the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the salmon is cooked through and flakes easily with a fork.

            Make the Lime Salsa: In a medium bowl, combine diced avocado, cherry tomatoes, chopped red onion, cilantro, and lime juice. Season with salt and pepper to taste. Toss gently to combine.

              Serve: Remove the skewers from the grill and drizzle with any remaining marinade if desired. Serve hot with lime salsa on the side.
