For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the Apple Filling:

3 medium apples (e.g., Granny Smith), peeled, cored, and sliced

¼ cup granulated sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 tablespoon all-purpose flour

For the Cheesecake Filling:

16 oz cream cheese, softened

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

For the Salted Caramel Sauce:

1 cup granulated sugar

6 tablespoons unsalted butter, cut into pieces

½ cup heavy cream

1 teaspoon sea salt

For Topping:

Whipped cream

More salted caramel sauce

Chopped caramel candies or toffee bits (optional)

Instructions
 

Preheat your oven to 325°F (160°C).

    Make the Crust: In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix well. Press this mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then allow to cool.

      Prepare the Apple Filling: In a separate bowl, toss the sliced apples with sugar, ground cinnamon, lemon juice, and flour until coated. Set aside to let the flavors meld.

        Prepare the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese with granulated sugar until smooth. Add eggs one at a time while mixing, then add vanilla and sour cream. Mix until creamy and fully combined.

          Assemble the Cheesecake: Pour half of the cheesecake filling into the cooled crust, followed by the apple mixture evenly distributed on top. Pour the remaining cheesecake filling over the apples and smooth the top.

            Bake: Place the springform pan on a baking sheet and bake for 50-60 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven, crack the door open, and let it cool in the oven for an hour to prevent cracking.

              Make the Salted Caramel Sauce: In a saucepan over medium heat, melt the sugar, stirring constantly until it turns a golden color. Add butter and stir until melted. Slowly whisk in heavy cream until combined. Remove from heat and add sea salt. Allow to cool slightly.

                Chill the Cheesecake: Once the cheesecake has cooled to room temperature, refrigerate for at least 4 hours or overnight to set.

                  Serve: Remove the sides of the springform pan. Top with whipped cream, a drizzle of salted caramel sauce, and chopped caramel candies or toffee bits if desired.
