12 oz dark chocolate (70% or higher, chopped)

1 cup shelled pistachios (roughly chopped)

1 cup granulated sugar

6 tbsp unsalted butter

1/2 cup heavy cream

1 tsp sea salt (more for garnish)

1 tsp vanilla extract

Instructions
 

Prepare the Baking Sheet: Line a baking sheet (about 9x13 inches) with parchment paper, allowing some overhang for easy removal later. Set aside.

    Melt the Chocolate: In a heatproof bowl, melt the dark chocolate using a double boiler or in the microwave in 30-second intervals. Stir until the chocolate is completely smooth and melted.

      Spread the Chocolate: Pour the melted chocolate onto the prepared baking sheet. Using a spatula, spread it evenly to about 1/4 inch thickness. Set aside to cool slightly.

        Make the Caramel: In a medium saucepan, combine the granulated sugar over medium heat. Stir constantly until melted and turns a light amber color (about 8-10 minutes).

          Add Butter and Cream: Carefully add the unsalted butter and mix until melted. Slowly pour in the heavy cream (the mixture will bubble) and stir continuously until smooth. Remove from heat and stir in the sea salt and vanilla extract.

            Combine with Pistachios: Stir in the roughly chopped pistachios, reserving a few for topping. Quickly pour the caramel mixture over the melted chocolate on the baking sheet, spreading it gently to cover the chocolate.

              Garnish and Set: Sprinkle the reserved pistachios and additional sea salt over the top of the caramel. Allow the bark to set at room temperature for about 1 hour, or until completely cool and hardened.

                Break into Pieces: Once set, use the parchment overhang to lift the bark from the baking sheet. Break into pieces using your hands or cut with a sharp knife.
