1 lb (450g) Italian sausage (mild or spicy, based on preference)

4 medium-sized potatoes, peeled and diced (about 1.5 lbs)

1 medium onion, chopped

2 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup heavy cream

2 cups fresh kale, chopped (stems removed)

1 cup carrots, diced

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: fresh parsley, for garnish

Brown the Sausage: In a large pot over medium heat, add the Italian sausage. Use a wooden spoon to break it apart as it cooks. Sauté for about 5-7 minutes, until browned and cooked through. Once done, remove the sausage from the pot and set aside, leaving the drippings.

    Sauté Vegetables: In the same pot, add olive oil if needed. Add the chopped onion and minced garlic. Sauté for approximately 2-3 minutes, until the onion becomes translucent.

      Add Carrots & Potatoes: Stir in the diced carrots and potatoes. Toss to coat the vegetables in the oil and drippings, cooking for another 3-4 minutes.

        Simmer with Broth: Pour in the chicken broth, bringing the mixture to a boil. Once boiling, reduce the heat, cover, and let it simmer for 15-20 minutes, or until the potatoes are tender.

          Incorporate Sausage & Cream: Return the browned sausage to the pot and stir in the heavy cream. Add the dried thyme, smoked paprika, and season with salt and pepper to taste. Heat through for another 5 minutes.

            Add Greens: Fold in the chopped kale, cooking for an additional 2-3 minutes until the kale is wilted and tender.

              Serve: Ladle the soup into bowls, and if desired, garnish with freshly chopped parsley.
