6 slices of crispy bacon

1 cup of shredded cheddar cheese

1/2 cup of diced bell peppers (red, green, or a mix)

1/2 cup of diced onions

1/4 teaspoon of black pepper

1/4 teaspoon of garlic powder

1/4 teaspoon of smoked paprika

4 large flour tortillas

Fresh cilantro (for garnish)

Cook the Bacon: In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess grease. Reserve 1 tablespoon of bacon grease in the skillet. Crumble the bacon into bite-sized pieces once it cools.

    Sauté the Veggies: Add the diced bell peppers and onions to the skillet with the reserved bacon grease. Sauté for about 3-4 minutes, or until they become soft and slightly caramelized.

      Prepare the Eggs: In a mixing bowl, whisk together the eggs, black pepper, garlic powder, and smoked paprika until combined. Pour the egg mixture into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs are set but still creamy, about 3-5 minutes.
