8 oz chorizo sausage, casings removed

4 large eggs

1/4 cup milk

1/2 cup diced bell peppers (red and green)

1/4 cup diced onion

1/2 cup shredded cheddar cheese

4 small flour or corn tortillas

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Cook the Chorizo: In a large skillet over medium heat, add the chorizo. Cook until browned and fully cooked, about 5-7 minutes. Use a spatula to break it up into smaller pieces as it cooks.
