Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 cup uncooked long-grain rice

2 cups beef broth

1 can (14.5 oz) diced tomatoes, undrained

1 cup frozen mixed vegetables (peas, corn, carrots)

2 cups shredded cheddar cheese

1 tsp paprika

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, heat olive oil and add the diced onion. Sauté for about 3-4 minutes until translucent.

      Add minced garlic and cooking for another minute until fragrant.

        Stir in the ground beef, breaking it apart with a spoon. Cook until browned and no pink remains, about 5-7 minutes. Drain excess fat if necessary.

          In a large mixing bowl, combine the cooked beef mixture with rice, beef broth, diced tomatoes (with juice), frozen mixed vegetables, paprika, Italian seasoning, salt, and black pepper. Mix until well combined.

            Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.

              Cover the baking dish with aluminum foil and bake for 30 minutes.

                Remove the foil, sprinkle the shredded cheddar cheese evenly over the top, and return to the oven, uncovered, for an additional 15-20 minutes, or until the cheese is melted and bubbly.

                  Once done, let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
