12 ounces fettuccine pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper, diced (red or yellow)

1 cup cherry tomatoes, halved

2 cups fresh spinach, roughly chopped

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

2 cups heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/2 cup breadcrumbs

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until no longer pink, about 5-7 minutes. Season with salt, pepper, Italian seasoning, and paprika. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add chopped onions, and bell pepper, and sauté for about 3-4 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: Return the cooked chicken to the skillet. Stir in the cherry tomatoes and fresh spinach, cooking until the spinach wilts, about 2-3 minutes.

          Make the Sauce: Pour in the heavy cream and bring to a gentle simmer. Add 3/4 cup of Parmesan cheese and stir until melted and well combined. Adjust seasoning with salt and pepper.

            Combine Pasta and Sauce: Add the cooked fettuccine to the skillet and toss gently until the pasta is coated in the creamy sauce.

              Transfer to Baking Dish: Preheat the oven to 375°F (190°C). Transfer the fettuccine mixture to a greased 9x13 inch baking dish. Sprinkle the remaining Parmesan cheese and shredded mozzarella cheese on top, followed by the breadcrumbs.

                Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
