Ingredients
  

1 whole chicken (about 4-5 lbs)

1 lemon, halved

10 cloves of garlic, smashed

1/4 cup olive oil

2 tbsp fresh rosemary, finely chopped

2 tbsp fresh thyme, finely chopped

1 tbsp fresh parsley, chopped

1 tbsp sea salt

1 tsp black pepper

1/2 tsp paprika

1 cup low-sodium chicken broth

Fresh vegetables for roasting (carrots, potatoes, onions - optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Prepare the Chicken: Rinse the chicken under cold water and pat it dry with paper towels. This will help achieve a crispy skin.

      Make the Herb Mixture: In a small bowl, combine the olive oil, smashed garlic, chopped rosemary, thyme, parsley, sea salt, black pepper, and paprika. Mix well to form a paste.

        Season the Chicken: Using your fingers, gently loosen the skin of the chicken breast and thighs. Rub half of the herb mixture directly onto the meat under the skin. Rub the remaining mixture all over the outside of the chicken, making sure to coat it evenly.

          Stuff the Chicken: Squeeze the juice from one of the lemon halves into the cavity of the chicken, and then place both lemon halves and a few additional garlic cloves inside the cavity.

            Optional Vegetables: If using, chop your choice of vegetables into large chunks and scatter them around the chicken in a roasting pan. Drizzle with a little olive oil and season with salt and pepper.

              Add Broth: Pour the chicken broth into the bottom of the roasting pan. This will help keep the chicken moist during roasting and add flavor.

                Roast the Chicken: Place the chicken in the preheated oven and roast for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh. Baste the chicken with pan juices halfway through cooking for extra flavor.

                  Rest Before Serving: Once done, remove the chicken from the oven and let it rest for about 15-20 minutes. This allows the juices to redistribute.
