4 cups cooked jasmine rice (preferably day-old for the best texture)

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup mixed vegetables (peas, carrots, corn)

3 eggs, beaten

4 green onions, sliced

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

2 tablespoons vegetable oil (for stir-frying)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Prepare Ingredients: Ensure that all ingredients are prepared and within reach, as stir-frying happens quickly. Make sure your rice is cold and clumped together to avoid mushiness.

    Marinate Shrimp: In a bowl, toss the shrimp with a pinch of salt, pepper, and half of the minced garlic. Set aside for about 15 minutes to allow the flavors to develop.

      Cook the Eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs, scrambling gently until just set. Remove the eggs from the skillet and set aside.

        Sauté Aromatics: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the chopped onion and the remaining minced garlic. Stir-fry for about 2-3 minutes, or until the onions are translucent and fragrant.
