Savory Herb and Cheese Scones

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

2 tablespoons fresh chives, chopped

2 tablespoons fresh parsley, chopped

1 tablespoon fresh thyme leaves, chopped

3/4 cup buttermilk

1 large egg (for egg wash)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

      Add the cold, cubed butter to the dry ingredients. Use your fingertips or a pastry cutter to mix until the mixture resembles coarse crumbs.

        Stir in the cheddar cheese, Parmesan cheese, chives, parsley, and thyme until evenly distributed.

          Pour in the buttermilk and stir gently until just combined. Avoid overmixing; the dough should be soft and a bit sticky.

            Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick.

              Cut the dough into triangles or use a round cutter to form scones, and place them on the prepared baking sheet.

                In a small bowl, whisk the egg and apply a light wash on top of each scone for a golden finish.

                  Bake for 15-20 minutes, or until the scones are golden brown and cooked through.

                    Allow the scones to cool slightly on the baking sheet before transferring to a wire rack. Serve warm, with butter or your choice of spread.
