Savory Spinach and Feta Stuffed Pastries

Ingredients
  

1 package (1 lb) of frozen puff pastry (2 sheets), thawed

2 cups fresh spinach, washed and chopped

1 cup crumbled feta cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg (for egg wash)

1 tablespoon olive oil

½ teaspoon black pepper

½ teaspoon salt

¼ teaspoon nutmeg (optional)

Sesame seeds (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for another 1 minute, until fragrant.

      Cook the Spinach: Add the chopped spinach to the skillet. Sauté until wilted, which should take about 2-3 minutes. Remove from heat and let the mixture cool slightly.

        Mix the Filling: In a mixing bowl, combine the sautéed spinach and onion mixture with crumbled feta cheese, salt, black pepper, and nutmeg (if using). Mix well until all ingredients are evenly combined.

          Prepare the Pastry: On a lightly floured surface, roll out the thawed puff pastry sheets to about 1/8 inch thick. Cut each sheet into 4 equal squares.

            Fill the Pastries: Place a generous tablespoon of filling in the center of each pastry square. Fold the corners of the square over the filling to form a triangle and press to seal. Use a fork to crimp the edges for a decorative touch and to ensure they are tightly closed.

              Egg Wash: Beat the large egg in a small bowl. Brush the tops of the stuffed pastries with the egg wash to give them a golden color during baking.

                Garnish: Sprinkle sesame seeds on top of the pastries for added texture and flavor.

                  Bake the Pastries: Place the stuffed pastries on the prepared baking sheet and bake in the preheated oven for 20-25 minutes or until they are golden and puffed up.
