1 pound Italian sausage (mild or spicy, based on preference)

2 bell peppers (any colors you like), sliced

1 large red onion, sliced

1 zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Sausage: Cut the Italian sausage into bite-sized pieces. Place them in a large mixing bowl.

      Add the Veggies: Add the sliced bell peppers, red onion, zucchini, and halved cherry tomatoes to the bowl with the sausage.

        Season the Mixture: Drizzle the olive oil over the vegetables and sausage. Sprinkle in the smoked paprika, dried oregano, garlic powder, salt, and pepper. Toss everything together until well coated in the seasoning and oil.

          Spread on Baking Sheet: Line a large baking sheet with parchment paper. Spread the sausage and veggie mixture evenly across the sheet in a single layer.

            Roast in the Oven: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender and slightly caramelized. Stir halfway through for even cooking.

              Add Fresh Garlic: In the last 5 minutes of cooking, sprinkle the minced garlic over the mixture for an extra burst of flavor.
