Ingredients

1 cup Arborio rice

4 cups whole milk

1/2 cup pure maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup chopped pecans, toasted

2 tablespoons unsalted butter

1/4 cup heavy cream (optional, for garnish)

Additional pecans and a drizzle of maple syrup for serving

Instructions

Prepare the Pecans: Preheat your oven to 350°F (175°C). Spread the chopped pecans on a baking sheet and toast them in the oven for about 8–10 minutes, or until fragrant and golden brown. Set aside to cool.

Cook the Rice: In a large saucepan, combine the Arborio rice and whole milk. Cook over medium heat, stirring frequently until the mixture comes to a gentle simmer.

Add Sweetness and Flavor: Once simmering, reduce the heat to low. Stir in the maple syrup, vanilla extract, salt, and ground cinnamon. Continue to cook for about 25–30 minutes, stirring often, until the rice is tender and the pudding has thickened to a creamy consistency.

Incorporate Butter and Pecans: Stir in the butter and half of the toasted pecans into the pudding. Mix well and cook for an additional 2–3 minutes until the butter melts completely.

Serve the Pudding: Remove from heat and let the pudding cool slightly. You can serve it warm, chilled, or at room temperature. For a luxurious touch, drizzle some heavy cream over the top and garnish with the remaining toasted pecans and an extra drizzle of maple syrup just before serving.
