Simple and Savory Stuffed Bell Peppers

4 medium bell peppers (any color)

1 cup cooked rice (white or brown)

1 pound ground turkey or beef

1 cup black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 cup diced tomatoes (canned or fresh)

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. If necessary, trim the bottom slightly to ensure they stand upright. Rinse and set aside.

      Cook the Meat: In a large skillet over medium heat, cook the ground turkey or beef until browned and fully cooked. Drain any excess fat.

        Make the Filling: To the skillet with the cooked meat, add the cooked rice, black beans, corn, diced tomatoes, cumin, paprika, garlic powder, onion powder, salt, and pepper. Mix thoroughly and allow to simmer for about 5 minutes, ensuring everything is well combined and heated through.

          Stuff the Peppers: Spoon the filling into each bell pepper, packing it tightly. Place them upright in a baking dish.

            Top with Cheese: Sprinkle the shredded cheese over the top of each stuffed pepper.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and slightly golden.

                Garnish and Serve: Remove from the oven and let cool for a few minutes. If desired, garnish with fresh cilantro or parsley before serving.
