Simple Shrimp Fried Rice

2 cups cooked jasmine rice (preferably day-old for best texture)

1 pound large shrimp, peeled and deveined

2 tablespoons vegetable oil (or sesame oil for added flavor)

2 large eggs, lightly beaten

1 cup frozen peas and carrots mix (or fresh, diced)

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce (optional)

Salt and pepper to taste

A squeeze of fresh lime juice (optional, for serving)

Prep the Ingredients: Start by ensuring all your ingredients are ready to go, as stir-frying is a quick process. If using day-old rice, break apart any clumps with your hands.

    Cook the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and season lightly with salt and pepper. Cook until they turn pink and are opaque, about 2-3 minutes. Remove the shrimp from the skillet and set aside.

      Scramble the Eggs: In the same pan, add the remaining tablespoon of oil. Pour in the beaten eggs and scramble until just set. Remove them from the pan and set aside with the shrimp.

        Stir-Fry the Vegetables: In the same skillet, add the minced garlic and the white parts of the green onions. Sauté for about 30 seconds until fragrant. Then, add the peas and carrots and cook for 1-2 minutes until they’re heated through.
