3-4 lbs beef chuck roast

1 cup balsamic vinegar

1/2 cup beef broth

1/4 cup brown sugar

2 tablespoons soy sauce

4 cloves garlic, minced

1 medium onion, chopped

2 carrots, sliced

2 celery stalks, chopped

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

Fresh parsley, for garnish

Prepare the Beef: Season the beef chuck roast generously with salt and pepper on all sides.

    Sear the Meat (optional): In a large skillet, heat a tablespoon of oil over medium-high heat. Sear the beef on all sides until browned (about 3-4 minutes per side), then transfer it to the slow cooker. This step adds depth of flavor but can be skipped for a simpler preparation.

      Mix the Sauce: In a bowl, whisk together the balsamic vinegar, beef broth, brown sugar, soy sauce, garlic, thyme, and rosemary until well combined.

        Layer the Vegetables: Add the chopped onion, carrot slices, and celery to the slow cooker around the beef.
