2 lbs beef chuck roast, cut into 2-inch pieces

1 cup sliced mushrooms (button or cremini)

1 large onion, chopped

3 cloves garlic, minced

2 cups low-sodium beef broth

1 cup red wine (optional, can substitute with more broth)

1 tablespoon Worcestershire sauce

2 tablespoons tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

1 tablespoon olive oil

3 tablespoons cornstarch (optional, for thickening)

3 tablespoons water (optional, for thickening)

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef pieces with salt and pepper, then sear them in batches until browned on all sides. This step helps to develop flavor and should take about 4-5 minutes per batch. Once browned, transfer the beef to your slow cooker.

    Sauté Vegetables: In the same skillet, add the onions and mushrooms. Sauté for about 5 minutes, until the onions are translucent and mushrooms release their moisture. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add Flavor Components: To the skillet, stir in the tomato paste, Worcestershire sauce, dried thyme, and rosemary. Pour in the red wine (or extra beef broth) and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.

        Combine in Slow Cooker: Pour the entire mixture over the beef in the slow cooker. Add the beef broth and stir gently to combine all ingredients.

          Slow Cook: Cover the slow cooker and cook on low for 8 hours or high for 4-5 hours, until the beef is tender and the gravy is flavorful.

            Thicken Gravy (Optional): If you prefer a thicker gravy, mix cornstarch and water in a small bowl until smooth. About 20 minutes before serving, stir this mixture into the slow cooker and allow it to cook on high for the remaining time until thickened.
