3 cloves garlic, minced

2 cups beef broth

1 cup red wine (optional, can substitute with additional broth)

2 tablespoons tomato paste

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons all-purpose flour (optional, for thickening)

Fresh parsley, chopped (for garnish)

Sear the Beef: In a skillet over medium-high heat, add olive oil. Season the beef cubes with salt and pepper. Sear them in batches until browned on all sides. This step enhances the flavor of the stew. Transfer the browned beef to the slow cooker.

    Sauté the Vegetables: In the same skillet, reduce heat to medium. Add chopped onions and minced garlic, sautéing for about 3-4 minutes until translucent. Transfer to the slow cooker.

      Build the Stew: Add the sliced carrots, diced potatoes, beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves to the slow cooker. Stir well to combine all ingredients.
