Slow Cooker Beef Stew with Red Wine

2 lbs beef chuck, cut into 1-inch cubes

4 medium carrots, sliced into rounds

3 potatoes, diced (Yukon gold or red)

1 large onion, chopped

3 cloves garlic, minced

2 cups red wine (preferably a dry variety like Cabernet Sauvignon)

4 cups beef broth

2 tablespoons tomato paste

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

Fresh parsley for garnish

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add the beef to the skillet in batches and sear until browned on all sides, about 4-5 minutes per batch. Transfer the browned beef to the slow cooker.

    Sauté the Aromatics: In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until softened. Stir in the tomato paste and cook for an additional minute.

      Combine Ingredients: Add the sautéed onion and garlic mixture to the slow cooker with the seared beef. Then, add the carrots, potatoes, red wine, beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf. Stir to combine all the ingredients well.

        Cook: Cover the slow cooker and set it to low heat. Let it cook for 8 hours or on high heat for about 4 hours, until the beef is tender and the flavors have melded together.

          Finish and Serve: Once cooking is complete, taste and adjust seasoning with additional salt and pepper if needed. Remove the bay leaf. Ladle the stew into bowls, garnish with fresh parsley, and serve hot with crusty bread or over rice.
