Ingredients

4 boneless, skinless chicken thighs

1/2 cup brown sugar

1/4 cup soy sauce

1/4 cup ketchup

1 tablespoon minced garlic

1 tablespoon minced ginger (optional)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon ground black pepper

1 teaspoon salt

1/4 teaspoon red pepper flakes (optional, for heat)

1/2 cup green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions

Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season both sides with salt and black pepper.

Mix the Sauce: In a medium bowl, whisk together brown sugar, soy sauce, ketchup, minced garlic, minced ginger (if using), rice vinegar, sesame oil, and red pepper flakes. Ensure the sugar is well incorporated into the sauce mixture.

Combine in Slow Cooker: Place the seasoned chicken thighs into the slow cooker. Pour the brown sugar garlic sauce over the chicken, ensuring that each piece is well-coated.

Cook: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked (internal temperature should reach 165°F/74°C).

Last Touches: Once cooked, carefully remove the chicken and set it aside on a plate. If desired, you can thicken the sauce by setting the slow cooker to high and letting it cook uncovered for an additional 15-20 minutes.

Serve: Shred the chicken with two forks or leave the thighs whole, then drizzle the sauce over the top. Garnish with sliced green onions and sesame seeds before serving.

Enjoy: Serve the chicken over steamed rice, quinoa, or with a side of stir-fried vegetables for a complete meal.
