Slow Cooker Cajun Chicken Alfredo Recipe

1.5 lbs boneless, skinless chicken thighs

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 cup chicken broth

1 cup heavy cream

8 oz cream cheese, softened

2 cups fettuccine pasta

1 cup grated Parmesan cheese

1 cup bell peppers (red and green), diced

1 small onion, diced

3 cloves garlic, minced

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: Season the chicken thighs with Cajun seasoning, making sure to coat them evenly. Heat the olive oil in a skillet over medium-high heat. Once hot, sear the seasoned chicken for 3-4 minutes on each side until golden brown. Remove from heat.

    Prepare Slow Cooker: In the slow cooker, combine the chicken broth, heavy cream, and cream cheese. Stir until the cream cheese is melted and incorporated well into the broth mixture.

      Add Chicken and Veggies: Place the seared chicken thighs into the slow cooker. Add the diced bell peppers, onion, and minced garlic on top of the chicken. Stir gently to combine.

        Slow Cook: Cover and cook on low for 6 hours or on high for 3 hours, until the chicken is tender and easily shreddable.

          Cook Fettuccine: About 30 minutes before you're ready to serve, cook the fettuccine according to package instructions until al dente. Drain and set aside.

            Shred Chicken: Once the cooking time is up, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken back into the slow cooker, stirring to combine it with the creamy sauce.

              Finish the Dish: Add the grated Parmesan cheese to the slow cooker and stir until melted and well mixed into the sauce. Season with additional salt and pepper to taste.

                Combine with Pasta: Gently fold the cooked fettuccine into the sauce mixture within the slow cooker, ensuring the pasta is coated well.
