Slow Cooker Chili

Ingredients
  

1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

4 cloves garlic, minced

1 green bell pepper, diced

1 red bell pepper, diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes, with juice

1 can (6 oz) tomato paste

1 cup beef broth (or vegetable broth)

3 tbsp chili powder

2 tsp cumin

1 tsp smoked paprika

1 tsp oregano

Salt and pepper to taste

1 tbsp olive oil

Optional toppings: shredded cheese, sour cream, chopped green onions, jalapeños

Instructions
 

Prepare the Base: In a skillet over medium heat, add the olive oil. Once hot, sauté the diced onion and garlic, cooking for about 3-4 minutes until translucent.

    Cook the Meat: Add the ground beef (or turkey) to the skillet and cook until browned, breaking it apart with a spoon as it cooks, approximately 5-7 minutes. Drain excess fat if necessary.

      Transfer to Slow Cooker: Transfer the onion, garlic, and meat mixture into the slow cooker.

        Add Vegetables and Beans: Add the diced green and red bell peppers, kidney beans, black beans, diced tomatoes, and tomato paste to the slow cooker.

          Incorporate Broth & Seasonings: Pour in the beef (or vegetable) broth, and sprinkle in the chili powder, cumin, smoked paprika, oregano, and season with salt and pepper. Stir well to combine all ingredients.

            Slow Cook: Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours, letting the flavors meld together beautifully.

              Serve: Once cooked, give the chili a good stir. Taste and adjust seasoning as needed. Serve hot, topped with your choice of shredded cheese, sour cream, chopped green onions, or jalapeños.
