Slow Cooker Corned Beef

3-4 pounds corned beef brisket (includes spice packet)

4 cups beef broth (low sodium)

1 large onion, quartered

4 cloves garlic, minced

1 lb baby carrots, halved

1 lb baby potatoes, halved (red or Yukon gold)

1 small head of cabbage, cut into wedges

2 tablespoons apple cider vinegar

2 tablespoons brown sugar

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon black peppercorns

2 bay leaves

Instructions
 

Prepare the Corned Beef: Rinse the corned beef brisket under cold water to remove excess salt and place it in the bottom of the slow cooker.

    Make the Broth: In a medium bowl, mix the beef broth, apple cider vinegar, brown sugar, Dijon mustard, and Worcestershire sauce. Pour this mixture over the brisket.

      Add Aromatics: Scatter the quartered onion and minced garlic around the brisket. Add the black peppercorns and bay leaves to the pot.

        Layer Vegetables: Add the halved baby potatoes and baby carrots to the slow cooker. Push them down gently into the liquid.

          Cook the Meat: Cover the slow cooker with the lid and cook on low for 8-10 hours or until the corned beef is tender.

            Prepare the Cabbage: About 1 hour before serving, add the cabbage wedges to the slow cooker, placing them on top of the meat and vegetables. Cover and allow to cook until wilted and tender.

              Serve: Once done, transfer the corned beef to a cutting board and slice against the grain. Serve hot with the vegetables and some of the cooking liquid drizzled on top.

                Optional Garnish: Sprinkle with fresh chopped parsley for a vibrant touch before serving.
