Ingredients
  

1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup frozen mixed bell peppers

1 cup shredded cheddar cheese

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup tater tots (frozen)

Fresh cilantro or green onions for garnish (optional)

Instructions
 

In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and fully cooked, about 5-7 minutes. Drain excess grease.

    Transfer the beef mixture to your slow cooker. Add black beans, corn, diced tomatoes (with juice), bell peppers, chili powder, cumin, salt, and pepper. Stir well to combine all ingredients.

      Cook on low for 4-6 hours or on high for 2-3 hours in the slow cooker.

        30 minutes before serving, sprinkle the shredded cheddar cheese over the top of the casserole, then add the frozen tater tots on top of the cheese. Cover and continue to cook until the tater tots are crispy and heated through, about 20-30 minutes.

          Once done, let it cool for a few minutes before serving. Garnish with fresh cilantro or green onions if desired.
