Slow Cooker Cowboy Casserole

Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chiles

1 cup frozen mixed vegetables (peas, carrots, corn)

1 packet taco seasoning

1 cup beef broth or water

2 cups shredded cheddar cheese

1 cup sour cream

Salt and pepper to taste

1 bag (12 oz) tortilla chips (for topping)

Instructions
 

In a skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain the excess fat, then transfer the meat to the slow cooker.

    To the slow cooker, add the chopped onion, garlic, bell pepper, black beans, corn, diced tomatoes, frozen mixed vegetables, taco seasoning, and beef broth. Stir well to combine all ingredients.

      Season with salt and pepper to taste, then cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours.

        About 30 minutes before serving, stir in 1 cup of shredded cheddar cheese and the sour cream. Allow it to heat through, and stir until well blended.

          Before serving, taste and adjust seasoning if necessary. For an extra crunch, top with crushed tortilla chips and remaining cheese. Cover for a few minutes until the cheese melts.

            Serve hot, garnished with fresh cilantro or green onions if desired.
