Ingredients

2 cans (28 ounces each) crushed tomatoes

1 medium onion, chopped

4 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 tablespoon olive oil

1 tablespoon sugar (optional, to balance acidity)

1 teaspoon dried basil (or 1/4 cup fresh basil, chopped)

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Sauté Aromatics: In a skillet over medium heat, add olive oil. Sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

Combine Ingredients: In your slow cooker, combine the sautéed onion and garlic with the crushed tomatoes, vegetable broth, sugar (if using), dried basil, oregano, salt, and pepper. Stir to mix well.

Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours.

Blend for Creaminess: 30 minutes before serving, add the heavy cream. Use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a traditional blender; just be cautious with the hot liquid.

Adjust Seasoning: Taste and adjust seasoning if needed, adding more salt, pepper, or fresh basil.

Serve: Ladle the soup into bowls and garnish with fresh basil leaves. Enjoy with crusty bread or a grilled cheese sandwich!
