Ingredients
  

2-3 lbs beef chuck roast

1 onion, sliced

4 cloves garlic, minced

2 cups beef broth

1 cup dry red wine (optional)

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper, to taste

4-6 hoagie rolls or baguettes

Sliced provolone or Swiss cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Beef: Season the beef chuck roast generously with salt and pepper on all sides.

    Sear the Beef (Optional): In a hot skillet over medium-high heat, sear the beef roast on all sides until browned (about 3-5 minutes per side). This step adds extra flavor but can be skipped if desired.

      Layer Ingredients in the Slow Cooker: Place the sliced onion and minced garlic at the bottom of the slow cooker. Lay the seared beef on top.

        Add Liquids and Seasoning: In a bowl, mix together beef broth, red wine (if using), Worcestershire sauce, soy sauce, dried thyme, dried oregano, and bay leaf. Pour evenly over the beef.

          Cook: Cover and cook on low for 8 hours or high for 4-5 hours, until the beef is tender and easily shreds with a fork.

            Shred the Beef: Once cooked, remove the beef from the slow cooker and place it on a cutting board. Shred the beef using two forks and return it to the slow cooker to soak up the juices.

              Prepare the Sandwiches: Slice the hoagie rolls in half. If using cheese, place a slice on the bottom half of each roll. Using a slotted spoon, fill each roll with generous amounts of the shredded beef.

                Serve: Ladle some of the cooking liquid into small bowls for dipping. Garnish the sandwiches with fresh parsley, if desired. Enjoy your delicious French dip sandwiches!
