Ingredients

4 boneless pork chops (about 1 inch thick)

2 large onions, thinly sliced

3 cloves garlic, minced

1 cup beef broth

1/2 cup French onion soup (canned or homemade)

1 tablespoon Worcestershire sauce

1 teaspoon thyme (dried)

1 teaspoon rosemary (dried)

1 teaspoon black pepper

1 tablespoon olive oil

1 cup shredded Gruyère cheese (or Swiss cheese)

Salt to taste

Fresh parsley for garnish (optional)

Instructions

Sear the Pork Chops:

Heat the olive oil in a skillet over medium-high heat. Season the pork chops with salt and pepper. Once the oil is hot, sear the pork chops on each side for about 3-4 minutes until they are golden brown. This step adds depth of flavor.

      Prepare the Onion Mixture:

In the same skillet, add the sliced onions and cook for about 5 minutes until they start to soften. Then add the minced garlic, thyme, and rosemary, cooking for an additional 2 minutes until fragrant.

          Combine in Slow Cooker:

In your slow cooker, place the seared pork chops at the bottom. Pour the beef broth, French onion soup, and Worcestershire sauce over the chops. Spoon the sautéed onions and garlic mixture on top.

              Cook Slow:

Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the pork chops are tender and cooked through.

                  Add Cheese:

About 15 minutes before serving, sprinkle the shredded Gruyère cheese over the pork chops. Cover the slow cooker again and let the cheese melt.

                      Serve:

Once the cheese is melted and bubbly, carefully remove the pork chops from the slow cooker. Serve hot, spooning extra onions and sauce over the top. Garnish with fresh parsley if desired.

                          Enjoy!

Pair with mashed potatoes, rice, or a side salad for a complete meal.
