1.5 lbs beef sirloin, cut into bite-sized cubes

1.5 lbs baby potatoes, halved

6 tablespoons unsalted butter, divided

6 cloves garlic, minced

1 medium onion, diced

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: In a skillet over medium-high heat, melt 2 tablespoons of butter. Add the beef cubes, seasoning them with salt and pepper. Sear until browned on all sides (about 3-4 minutes). Remove from heat and set aside.

    Sauté Aromatics: In the same skillet, add another tablespoon of butter and the diced onion. Sauté for 2-3 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant. Transfer to the slow cooker.

      Combine Ingredients: In the slow cooker, place the halved baby potatoes. Add the seared beef, sautéed onion and garlic, Worcestershire sauce, soy sauce, thyme, smoked paprika, and the remaining butter (in chunks).

        Cook: Pour in enough water or beef broth to just cover the ingredients. Stir gently to combine everything. Cover the slow cooker and cook on low for 6-7 hours or on high for 4 hours, until the beef is tender and the potatoes are cooked through.

          Finish and Serve: Once cooked, taste and adjust seasoning with more salt and pepper if needed. Garnish with freshly chopped parsley before serving. Enjoy your hearty meal!
