2 lbs boneless, skinless chicken thighs

1/2 cup honey

1/4 cup soy sauce (low sodium)

1/4 cup ketchup

2 tablespoons apple cider vinegar

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon sesame oil

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional, for heat)

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prep the Sauce: In a medium bowl, whisk together the honey, soy sauce, ketchup, apple cider vinegar, minced garlic, grated ginger, sesame oil, salt, pepper, and red pepper flakes (if using) until well combined.

    Prepare the Chicken: Place the chicken thighs in the slow cooker and pour the honey sauce mixture over them, ensuring they are fully coated.
