2 racks of baby back ribs (about 4 lbs total)

1 cup honey

1/2 cup soy sauce

1/4 cup apple cider vinegar

6 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon ground black pepper

1/2 teaspoon red pepper flakes (optional, for a kick)

1 teaspoon smoked paprika

1 tablespoon cornstarch (optional, for thickening sauce)

2 tablespoons water (if using cornstarch)

Salt, to taste

Fresh cilantro or green onions, for garnish (optional)

Instructions
 

Prepare the Ribs: Start by removing the silver skin from the back of the ribs for maximum tenderness. Pat them dry with paper towels and season generously with salt and black pepper.

    Make the Sauce: In a mixing bowl, combine honey, soy sauce, apple cider vinegar, minced garlic, grated ginger, smoked paprika, and red pepper flakes (if using). Whisk until well combined.

      Into the Slow Cooker: Place the ribs into the slow cooker in a single layer. If they don’t fit perfectly, that’s okay—just fold them as needed. Pour the honey garlic sauce over the ribs, ensuring they are well coated.

        Cook Low and Slow: Cover the slow cooker with the lid and set it to cook on low for 7 to 8 hours, or on high for 4 to 5 hours. The longer they cook, the more tender they will become.

          Optional Step for Thick Sauce: If you prefer a thicker sauce, about 30 minutes before serving, remove the ribs from the slow cooker carefully. In a small bowl, mix the cornstarch with the water to make a slurry. Pour the remaining sauce into a saucepan and bring it to a simmer. Stir in the cornstarch mixture until the sauce thickens.

            Glaze Before Serving: Return the ribs to the slow cooker, pouring the thickened sauce over them, or brush the ribs directly with the thick sauce for extra flavor. Let them cook on warm for an additional 30 minutes.
