Slow Cooker Peach Chili

2 cups fresh or frozen peaches, diced

1 lb ground turkey or beef (or plant-based alternative)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 cup onion, finely chopped

2 cloves garlic, minced

1 cup bell pepper (red or yellow), chopped

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp cinnamon

1/4 tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

1 tbsp olive oil

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Sauté the Aromatics: In a skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until translucent (about 5-7 minutes). Add minced garlic and cook for an additional minute until fragrant.

    Brown the Meat: Push the onions and peppers to the side of the skillet. In the same skillet, add the ground turkey or beef. Cook until browned and no longer pink, breaking it up with a wooden spoon. Drain any excess fat if necessary.

      Prepare the Slow Cooker: In a large slow cooker, combine the sautéed onion, bell pepper, garlic, and browned meat. Add in the diced peaches, black beans, kidney beans, diced tomatoes with green chilies, chili powder, cumin, smoked paprika, cinnamon, cayenne pepper, salt, and pepper. Stir everything together until well mixed.

        Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. The flavors will meld beautifully, and the chili will thicken.

          Taste and Adjust: About 30 minutes before serving, taste the chili and adjust the seasoning if necessary, adding more salt, pepper, or spices if desired.

            Serve: Once cooked, ladle the chili into bowls. Garnish with fresh cilantro and a dollop of sour cream or Greek yogurt if you like.
