1 tablespoon baking powder

1 tablespoon smoked paprika

1 cup sharp cheddar cheese, shredded

3/4 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 tablespoon fresh chives, chopped (optional)

Extra flour for dusting

A pinch of cayenne pepper (optional, for extra heat)

Preheat the Oven: Start by preheating your oven to 425°F (220°C), and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, smoked paprika, garlic powder (if using), and cayenne pepper (if you like it spicy). Whisk them together until evenly mixed.

      Add Butter: Add the chilled cubed butter into the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
