For the Salmon Patties:

1 pound fresh salmon fillets, skin removed

1/4 cup panko breadcrumbs

2 tablespoons fresh parsley, finely chopped

1 tablespoon green onion, finely sliced

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Zest of 1 lemon

For the BBQ Sauce:

1/2 cup ketchup

2 tablespoons apple cider vinegar

1 tablespoon brown sugar

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (optional, for heat)

For Assembly:

Slider buns (6-8 mini buns)

Coleslaw (store-bought or homemade)

Pickles (optional)

Fresh cilantro or arugula for garnish

Instructions
 

Prepare the Salmon Patties:

    - In a food processor, add the salmon fillets and pulse until finely minced but not pureed. You want a nice chunky texture.

      - Transfer the minced salmon to a mixing bowl. Add in the panko breadcrumbs, parsley, green onion, Dijon mustard, Worcestershire sauce, smoked paprika, garlic powder, salt, pepper, and lemon zest.

        - Mix gently until all ingredients are well combined. Form the mixture into 6-8 equal-sized patties.

          Cook the Salmon Patties:

            - Heat a large skillet or grill pan over medium heat and add a tablespoon of olive oil. Once hot, add the salmon patties, cooking them for about 4-5 minutes per side, or until golden brown and cooked through. Make sure to flip them carefully to avoid breaking.

              Make the BBQ Sauce:

                - While the patties are cooking, in a small saucepan, combine ketchup, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, and cayenne pepper.

                  - Stir over medium heat until warmed through and slightly thickened, about 3-4 minutes. Set aside.

                    Assemble the Sliders:

                      - Lightly toast the slider buns on the grill or in the skillet.

                        - Spread a spoonful of BBQ sauce on the bottom half of the bun.

                          - Place the cooked salmon patty on top, followed by a dollop of coleslaw, some pickles if desired, and a sprinkle of cilantro or arugula.

                            - Top with the other half of the bun.
