Smoky Chipotle Mac & Cheese – A Fiery Comfort Food!

8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup pepper jack cheese, shredded

4 tbsp unsalted butter

3 tbsp all-purpose flour

2 cups whole milk

1 tsp smoked paprika

1-2 tsp chipotle powder (adjust to taste)

1 tsp garlic powder

½ tsp onion powder

Salt and freshly cracked black pepper, to taste

½ cup panko breadcrumbs

2 tbsp olive oil

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux, cooking for about 2 minutes until lightly golden. Gradually whisk in the milk, ensuring there are no lumps.

      Season the Sauce: Continue to stir the mixture over medium heat until it thickens (about 5 minutes). Once thickened, reduce heat to low, and stir in the smoked paprika, chipotle powder, garlic powder, onion powder, salt, and pepper. Mix well.

        Add the Cheese: Remove the sauce from heat and slowly stir in the sharp cheddar and pepper jack cheeses until fully melted and creamy.

          Combine Pasta and Sauce: Add the cooked elbow macaroni into the cheese sauce, ensuring every piece is thoroughly coated.
