Ingredients
  

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup graham cracker crumbs

1 cup semi-sweet chocolate chips

1 cup mini marshmallows

Additional chocolate chips and marshmallows for topping (optional)

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

    Cream Butter & Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

      Add Eggs & Vanilla: Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.

        Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and graham cracker crumbs.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined.

            Fold in Chocolate & Marshmallows: Gently fold in the semi-sweet chocolate chips and mini marshmallows until evenly distributed throughout the dough.

              Spread the Dough: Pour the cookie batter into the prepared baking dish, using a spatula to spread it evenly. Sprinkle additional chocolate chips and marshmallows on top if desired.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until they are lightly golden around the edges and a toothpick inserted in the center comes out mostly clean (a few gooey bits are okay!).

                  Cool & Cut: Allow the cookie bars to cool in the pan for at least 15 minutes before lifting them out (if using parchment paper). Cut into squares and serve warm or at room temperature.
