2 cups cooked shredded chicken

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup cooked rice (white or brown)

1 cup grated cheese (cheddar or Monterey Jack)

1/2 cup sour cream

1 tablespoon taco seasoning

4 large flour tortillas

2 cups enchilada sauce (store-bought or homemade)

1/2 cup diced onions

1/4 cup chopped cilantro (optional for garnish)

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, cooked rice, taco seasoning, onions, and half of the grated cheese. Mix until well combined. Taste and adjust seasoning with salt and pepper as needed.

      Assemble the Burritos: Place a tortilla on a flat surface. Spoon about 1/4 of the chicken mixture into the center of the tortilla. Drizzle with a tablespoon of sour cream, then fold the sides over the filling and roll it up tightly into a burrito shape. Repeat with the remaining tortillas and filling.

        Arrange in a Baking Dish: Spread a layer of enchilada sauce on the bottom of a 9x13 inch baking dish. Place the rolled burritos seam-side down in the dish.

          Smother with Sauce: Pour the remaining enchilada sauce over the top of the burritos, ensuring they are well covered. Sprinkle the remaining cheese evenly over the top.

            Bake: Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is bubbly and golden.
