Ingredients

4 bone-in, skin-on chicken thighs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

1 large onion, sliced

2 cloves garlic, minced

1 bell pepper, sliced (red or green)

1 cup chicken broth

1 cup heavy cream

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Pat the chicken thighs dry with paper towels and season both sides with garlic powder, onion powder, smoked paprika, salt, and pepper.

Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is golden brown and crispy. Flip and cook on the other side for another 5 minutes. Remove the chicken and set aside.

Sauté Vegetables: In the same skillet, add sliced onion and bell pepper. Sauté for about 5 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.

Create the Sauce: Pour in the chicken broth, scraping up any browned bits from the skillet. Then stir in heavy cream, Worcestershire sauce, and dried thyme. Bring to a simmer.

Return Chicken to the Pan: Nestle the seared chicken thighs back into the skillet, skin-side up. Reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the chicken is cooked through and tender.

Final Touches: Once cooked, taste the sauce and adjust seasoning with salt and pepper if needed. Allow it to thicken slightly, uncovered, for an extra 5 minutes if desired.

Serve and Garnish: Serve the smothered chicken hot, generously spooning the creamy sauce and vegetables over the top. Garnish with fresh chopped parsley before serving.
