2 pounds baby red potatoes, halved

1 cup onion, chopped

1 cup bell pepper, chopped (red or green)

4 cloves garlic, minced

2 cups vegetable broth

1 cup heavy cream

1 tablespoon olive oil

½ teaspoon black pepper

½ teaspoon dried thyme

1 cup shredded cheese (cheddar or a blend)

Prepare the Potatoes: Wash the baby red potatoes thoroughly under cold water. Halve them and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened (about 5 minutes). Stir in the minced garlic and cook for an additional minute until fragrant.
